Ayam Goreng Mentega (Indonesian Butter-Fried Chicken)

Ingredients:

  • 8 chicken wings
  • 1 onion, sliced
  • 3 cloves garlic, finely sliced
  • 5 red chilies, sliced
  • 4 tablespoons butter
  • 2 tablespoons oyster sauce
  • 1 tablespoon sweet soy sauce
  • 1/2 tablespoon chicken seasoning (Totole)
  • A pinch of white pepper

Instructions:

  1. Marinate the Chicken:
Start by marinating the chicken wings with white pepper and chicken seasoning (Totole). For an extra touch of flavor, you may also add a splash of lime juice to the marinade. Allow the chicken to rest and absorb the flavors for at least 15 minutes.

  2. Cook the Chicken:
In a large skillet, melt the butter over medium-low heat. Once the butter is fully melted and bubbling, add the marinated chicken wings. Cook the wings slowly over low heat, turning occasionally, until they develop a golden-brown color and are crispy on the outside. This should take about 15-20 minutes, depending on the size of the wings.

  3. Add the Aromatics:
Add the sliced onions, garlic, and red chilies to the skillet with the chicken. Stir well to combine, and continue cooking until the onions are translucent and fragrant, and the garlic and chilies have softened.

  4. Season and Finish:
Pour in the oyster sauce and sweet soy sauce, stirring to coat the chicken and aromatics evenly. Cook for an additional 2-3 minutes, allowing the flavors to meld together and the sauce to slightly thicken.

  5. Serve:
Once the chicken is fully cooked and coated with the flavorful sauce, remove from heat. Transfer the chicken wings to a serving dish, ensuring to scoop up some of the delicious onions, garlic, and chilies along with them. Serve hot with steamed rice or as a delightful appetizer.

Enjoy this rich and savory Ayam Goreng Mentega, a delightful Indonesian classic that pairs perfectly with your favorite side dishes!
