- Preheat the oven to 425ยฐF (220ยฐC).
- In a 9-inch skillet over medium heat, melt 8 tablespoons of unsalted butter.
- Add the onion and cook for 5 minutes until soft, avoiding browning.
- Stir in the tarragon and parsley, ensuring a fragrant infusion.
- For raw seafood like shrimp or scallops, add them now and cook for 1 minute.
- Remove the skillet from heat and let it cool slightly.
- If using cooked lobster or crabmeat, add them to the mixture after it cools.
- Season the mixture with kosher salt and black pepper.
- Split the lobsters in half lengthwise using a cleaver or chef’s knife.
- Remove and discard the head sac, intestine, tomalley, and roe (if present).
- Break the tomalley and roe into small pieces using a fork.
- Crack the center of each claw on one side only with the back of a knife.
- Lightly season the lobsters with salt and pepper.
- On a large roasting pan or baking sheet, place the lobster halves together to resemble a butterfly.
- Mix the tomalley and roe into the seafood mixture if desired.
- Gently fold the crumbled crackers into the mixture for added texture.
- Divide the mixture evenly between the 2 lobsters.
- If serving one lobster per person, spread the stuffing over the center to maintain the lobster’s appearance.
- Avoid packing the stuffing too tightly to ensure even baking.
- Brush the exposed meat, tail, stuffing, and claws with 3 tablespoons of melted butter.
- Bake until the lobster is cooked through and the stuffing is crisp and golden.
- For a 1 1/2-pound lobster, bake for approximately 17 minutes; for a 2-pound lobster, bake for around 24 minutes.
