Ingredients:

  • 8 tablespoons unsalted butter
  • 3 tablespoons butter (for brushing)
  • 1 onion
  • 2 teaspoons tarragon
  • 2 teaspoons Italian parsley
  • 4 cups lobster meat
  • Salt (kosher and sea salt)
  • Black pepper
  • 2 lobsters
  • Optional: Tomalley and roe from lobsters

Instructions:

  1. Preheat the oven to 425ยฐF (220ยฐC).
  2. In a 9-inch skillet over medium heat, melt 8 tablespoons of unsalted butter.
  3. Add the onion and cook for 5 minutes until soft, avoiding browning.
  4. Stir in the tarragon and parsley, ensuring a fragrant infusion.
  5. For raw seafood like shrimp or scallops, add them now and cook for 1 minute.
  6. Remove the skillet from heat and let it cool slightly.
  7. If using cooked lobster or crabmeat, add them to the mixture after it cools.
  8. Season the mixture with kosher salt and black pepper.
  9. Split the lobsters in half lengthwise using a cleaver or chef’s knife.
  10. Remove and discard the head sac, intestine, tomalley, and roe (if present).
  11. Break the tomalley and roe into small pieces using a fork.
  12. Crack the center of each claw on one side only with the back of a knife.
  13. Lightly season the lobsters with salt and pepper.
  14. On a large roasting pan or baking sheet, place the lobster halves together to resemble a butterfly.
  15. Mix the tomalley and roe into the seafood mixture if desired.
  16. Gently fold the crumbled crackers into the mixture for added texture.
  17. Divide the mixture evenly between the 2 lobsters.
  18. If serving one lobster per person, spread the stuffing over the center to maintain the lobster’s appearance.
  19. Avoid packing the stuffing too tightly to ensure even baking.
  20. Brush the exposed meat, tail, stuffing, and claws with 3 tablespoons of melted butter.
  21. Bake until the lobster is cooked through and the stuffing is crisp and golden.
  22. For a 1 1/2-pound lobster, bake for approximately 17 minutes; for a 2-pound lobster, bake for around 24 minutes.
