Ingredients:
- 2 onions
- 100g butter
- 1 kg potatoes
- 8 spring onions
- 100ml milk
- 225g (approx.) additional butter for serving
Instructions:
-
Prepare Onions: Heat half of the butter and one tablespoon of cooking oil in a frying pan over high heat. Once the butter begins to bubble, add the onions and cook, stirring constantly, for approximately five minutes or until the onions start to wilt.
-
Caramelize Onions: Reduce the heat to very low and continue cooking the onions, stirring occasionally, until they are evenly browned and wilted, but not crisp.
-
Prepare Potatoes: In traditional Irish fashion, boil the potatoes in their skins until tender. Drain and allow the skins to dry and crack before peeling and mashing. Alternatively, you can peel the potatoes beforehand, wash off the starch, and boil them in salted water until tender. Drain and mash.
-
Prepare Spring Onions: Trim and slice the spring onions, including all the dark green bits. Place them in a pan with the milk and simmer until tender.
-
Combine Ingredients: Add the milk and onion mixture along with 25g of butter to the mashed potatoes. Beat with a wooden spoon until light and fluffy. Season with salt and pepper to taste.
-
Melt Butter: Melt the remaining butter.
-
Serve: Form the mashed potatoes into mounds on each plate, creating a well in the center of each mound to fill with the remaining melted butter. Top with the caramelized onions.
-
Enjoy: Serve immediately and encourage your diners to dip their spoonfuls of mashed potato into the pools of butter, savoring each decadent bite.
Tips: To elevate this dish further, consider experimenting with additional ingredients such as cabbage, garlic, leeks, parsley, chives, peas, or dulse to create your own unique variation of Irish mashed potatoes. Additionally, feel free to adjust the amount of butter according to your personal preference for richness and flavor.
