Cabbage Pachadi Recipe – A Healthy and Flavorful South Indian Chutney

Cabbage Pachadi is a delicious and nutritious South Indian chutney made from simple ingredients that can perfectly complement a variety of dishes such as idli, dosa, or paratha. This chutney is a great addition to your breakfast, offering a balance of flavors and a burst of health benefits. Mustard seeds 1/2 tbsp
Asafoetida A pinch
Dried red chillies 2
Oil 2 tsp

Instructions

  1. Heat the Oil: Start by heating 2 tablespoons of sesame oil in a pan. Add the white urad dal and roasted chana dal. Sauté them until they turn light brown, releasing a pleasant aroma.

  2. Add Green Chilies and Curry Leaves: Once the dals are browned, add the chopped green chillies and curry leaves to the pan. Let them cook for about 15 seconds to infuse the flavors.

  3. Cook the Cabbage: Next, add the chopped cabbage and salt to the pan. Stir well, and cook for around 8-10 minutes, or until the cabbage softens and becomes tender. Turn off the heat and allow the mixture to cool down.

  4. Grind the Cabbage Mixture: After the cabbage mixture has cooled, transfer it to a mixer grinder. Add the tamarind paste along with 1/2 cup of water. Grind everything together until it forms a smooth, thick paste. Once done, transfer it into a bowl.

  5. Prepare the Tempering: In a small tempering pan, heat 2 teaspoons of oil. Add the mustard seeds and cook for about 10 seconds, allowing them to splutter. Then, add a pinch of asafoetida and stir it into the tempering.

  6. Combine the Tempering with the Chutney: Pour the tempering mixture over the ground cabbage chutney and mix well to combine all the flavors.

  7. Serve: Your flavorful Cabbage Pachadi is now ready! Serve it with hot onion uttapam, ghee dosa, or masala dosa for a delicious and healthy meal.
