Instructions
-
Heat the Oil: Start by heating 2 tablespoons of sesame oil in a pan. Add the white urad dal and roasted chana dal. Sauté them until they turn light brown, releasing a pleasant aroma.
-
Add Green Chilies and Curry Leaves: Once the dals are browned, add the chopped green chillies and curry leaves to the pan. Let them cook for about 15 seconds to infuse the flavors.
-
Cook the Cabbage: Next, add the chopped cabbage and salt to the pan. Stir well, and cook for around 8-10 minutes, or until the cabbage softens and becomes tender. Turn off the heat and allow the mixture to cool down.
-
Grind the Cabbage Mixture: After the cabbage mixture has cooled, transfer it to a mixer grinder. Add the tamarind paste along with 1/2 cup of water. Grind everything together until it forms a smooth, thick paste. Once done, transfer it into a bowl.
-
Prepare the Tempering: In a small tempering pan, heat 2 teaspoons of oil. Add the mustard seeds and cook for about 10 seconds, allowing them to splutter. Then, add a pinch of asafoetida and stir it into the tempering.
-
Combine the Tempering with the Chutney: Pour the tempering mixture over the ground cabbage chutney and mix well to combine all the flavors.
-
Serve: Your flavorful Cabbage Pachadi is now ready! Serve it with hot onion uttapam, ghee dosa, or masala dosa for a delicious and healthy meal.
