  • 2 cups shrimp

  • 1/2 cup dry white wine
  • 1/2 cup cornmeal

  • 1/2 teaspoon thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare Seafood: Start by rinsing the crayfish tails or shrimp in cold water. Drain well and set aside.

  2. Prepare Batter: In a small bowl, whisk together the egg and dry white wine. Set aside.

  3. Combine Dry Ingredients: In a separate bowl, combine the cornmeal, flour, chopped chives, minced garlic, thyme, salt, cayenne pepper, and black pepper.

  4. Mix Batter: Gradually whisk the egg and wine mixture into the dry ingredients, ensuring everything is well blended. Allow the batter to rest, covered, at room temperature for about an hour.

  5. Heat Oil: Heat 2-3 inches of oil in a large frying pan to 375°F (190°C).
