Ingredients:
- 2 pounds fresh shrimp
- 1 cup water
- 1/2 cup yellow onions, chopped
- 3 bell peppers, diced
- 2 celery ribs, finely sliced
- 5 tomatoes, diced
- 10 cups water
- 2 tablespoons salt
- 1 teaspoon black pepper
- 1/2 teaspoon white pepper
- 1/2 cup fresh thyme
- 1/2 cup dried thyme
- 1 cup fresh basil
- 1/2 cup dried basil
- 1 tablespoon sugar
- 1 1/2 bay leaves
- 5 green onions, chopped
- 1 cup parsley, chopped
Instructions:

Peel and devein the shrimp.

Place shrimp heads and peels (if available) in a small saucepan, add water, and bring to a slow boil over medium-high heat. Boil for 15-20 minutes, then strain and discard heads and peels.

In a Dutch oven or large pot over medium-high heat, add oil. Saute onions, peppers, and celery until very soft (about 45 minutes).

Stir in tomatoes, salt, black pepper, white pepper, herbs, sugar, and shrimp stock. Return to simmer.
