  • 3 tablespoons vegetable oil

Instructions

  1. Prepare the Chickens: Begin by cutting each baby chicken along the backbone to remove the backbones, a technique known as spatchcocking. Lay each chicken flat on a hard surface and press down on the breastbone to flatten it out. Gently loosen the skin from the flesh, ensuring not to tear it from the breast to the thighs.

  2. Make the Cajun Stuffing: In a blender, combine the onions, garlic, chili powder, cumin powder, turmeric, and a pinch of salt. Blend until you achieve a smooth puree. With the blender running on low, slowly stream in the vegetable oil until the mixture is well blended and smooth.

  3. Stuff the Chickens: Carefully spread the Cajun stuffing mixture between the skin and flesh of each chicken, using about 1/4 of the mixture for each bird. Ensure the stuffing is evenly distributed, covering the entire surface.
