Ingredients:

Ingredient Quantity
Rajma (Large Kidney Beans) 1 cup (soaked overnight)
Rice 1 cup
Soy Chunks (Nuggets) 1 cup
Cumin seeds (Jeera) 1 teaspoon
Onion 1, sliced
Ginger Garlic Paste 1 tablespoon
Dried oregano 1 teaspoon
Dried thyme leaves 1 teaspoon
Red chili powder 1 tablespoon
Red chili sauce 2 tablespoons
Red chili flakes 1 teaspoon
Sugar 1 teaspoon
Salt To taste
Oil For cooking
Coriander (Dhania) Leaves 2 sprigs, chopped

Preparation Time:

60 minutes

Cooking Time:

45 minutes

Instructions:

  1. Soak the Beans and Rice
Begin by soaking the kidney beans overnight. Soak the rice for 30 minutes before starting the cooking process. Additionally, soak the soy chunks in one cup of water for about 10 minutes to rehydrate them.

  2. Cook the Spices and Onions
Heat a pressure cooker with a little oil. Add cumin seeds and allow them to sizzle. Then, add the sliced onions and sauté until they turn translucent. Add the ginger garlic paste and sauté for an additional minute until aromatic.

  3. Cook the Kidney Beans
Once the onions and spices are ready, add the soaked kidney beans, including the water that was used for soaking them. Stir in dried oregano, thyme, red chili powder, red chili flakes, sugar, and red chili sauce. Let the beans cook for about 20 minutes until they soften and begin to break down.

  4. Add Soy Chunks and Rice
Once the beans are softened, add the soaked soy chunks and rice. Stir everything together to combine. Add salt to taste, ensuring that the flavors meld together.

  5. Pressure Cook the Dish
Pour in 2 cups of water, ensuring that the rice and beans are submerged. Close the pressure cooker lid and cook for about 2 whistles. Once the whistles are done, reduce the heat and let it cook for another 5 minutes to allow the flavors to infuse.

  6. Garnish and Serve
Once the cooking is complete, release the pressure and fluff the rice. Garnish with freshly chopped coriander leaves to add a refreshing contrast to the rich, spicy flavors.

Serve this hearty Cajun Kidney Beans Rice with Soya Chunks hot with a side of Lauki Raita for a creamy, cooling accompaniment, or enjoy it as is with a chilled glass of your favorite cocktail to enhance the cozy dinner experience.

Enjoy the comforting blend of spices and textures in this delicious one-pot meal, perfect for a quick, flavorful lunch or dinner that will fill you up and keep you coming back for more!
