🍽️ Recipe Instructions:

  1. Brown the Meat: In a large skillet, brown the ground beef and ground sausage over medium heat until fully cooked. Drain any excess grease.

  2. Add Seasonings and Vegetables: To the skillet with the cooked meat, add diced onion, bell pepper, and garlic. Stir in the tomato sauce and Rotel tomatoes & chilies. Season with your favorite Cajun spices to taste. Allow the mixture to simmer until the vegetables are tender.

  3. Cook the Rice: Meanwhile, cook the rice according to package instructions. Once cooked, set aside.

  4. Prepare the Peppers: Preheat your oven to 350°F (175°C). While the meat sauce is simmering, prepare the bell peppers by cutting off the tops and removing the seeds and membranes.

  5. Combine Rice and Meat Mixture: Once the meat sauce is done simmering, skim off about two cups of the tomato gravy and set it aside. Gradually add the cooked rice to the meat mixture, stirring until well combined.

  6. Stuff the Peppers: Stuff each bell pepper with the meat and rice mixture, filling them to the top. Place the stuffed peppers in a large baking dish.

  7. Cover with Gravy: Pour the reserved tomato gravy over the stuffed peppers, covering them evenly.

  8. Bake: Transfer the baking dish to the preheated oven and bake for approximately 1 hour, or until the tops of the peppers are nicely browned and the peppers are tender.

  9. Serve: Once cooked, remove the stuffed peppers from the oven and let them cool slightly before serving. Enjoy these flavorful Cajun delights hot out of the oven!

These Char’s Cajun Beef & Sausage Stuffed Bell Peppers are a delightful combination of savory meats, zesty spices, and tender vegetables, all nestled inside sweet bell peppers. With a bit of Cajun flair, they’re sure to add some excitement to your mealtime rotation!
