Ingredients

Ingredient Quantity
Puff Pastry 230g
Grana Padano DOP (grated) 20g
Egg 1
Fresh Basil (for garnish) To taste
Knots (bread dough knots) 200g
Cherry Tomatoes 500g
Powdered Sugar 20g
Extra Virgin Olive Oil 20g
Fine Salt To taste
Lemon Zest 1
Oregano To taste

Instructions

  1. Prepare the Puff Pastry: Start by unrolling the puff pastry and gently place it on a flat surface. Transfer it into a 25 cm fluted tart pan, pressing the edges into place.

  2. Prepare the Egg Mixture: In a small bowl, beat the egg lightly. Set it aside for later.

  3. Dock the Pastry: Prick the base of the pastry with a fork to prevent it from puffing up too much during baking.

  4. Grate and Sprinkle Cheese: Evenly sprinkle the grated Grana Padano cheese over the base of the pastry.

  5. Bake the Pastry: Preheat the oven to 180°C (350°F) in static mode. Bake the pastry for about 30 minutes or until golden and crisp.

  6. Prepare the Confit Tomatoes: While the pastry bakes, wash and dry the cherry tomatoes. Cut each tomato in half and arrange them on a baking sheet lined with parchment paper.

  7. Season the Tomatoes: Drizzle the tomatoes with olive oil, sprinkle with fine salt, lemon zest, and a light dusting of oregano. Use a sifter to distribute the seasoning evenly.

  8. Bake the Tomatoes: Place the tomatoes in the oven and bake for about 25-30 minutes, or until they are tender and slightly caramelized.

  9. Assemble the Tart: Once the puff pastry is golden and crisp, remove it from the oven. Let it cool for a few minutes before transferring it to a cutting board.

  10. Add the Garnishes: Arrange the confit tomatoes on top of the tart base. Add the bread knots (pre-cooked) on top, and finish by garnishing with fresh basil leaves.

  11. Serve and Enjoy: Slice and serve the tart warm. This delightful savory tart with knots and confit cherry tomatoes is perfect for any occasion. Enjoy!

Tips:

  • For extra flavor, try adding a drizzle of balsamic glaze over the tart before serving.
  • If you prefer a more rustic look, feel free to leave the edges of the pastry freeform instead of tucking them neatly into the tart pan.

This savory tart is a perfect blend of crispy pastry, creamy cheese, sweet confit tomatoes, and aromatic herbs, making it an ideal choice for lunch or a light dinner.
