Instructions
- 
Prepare the Puff Pastry: Start by unrolling the puff pastry and gently place it on a flat surface. Transfer it into a 25 cm fluted tart pan, pressing the edges into place. 
- 
Prepare the Egg Mixture: In a small bowl, beat the egg lightly. Set it aside for later. 
- 
Dock the Pastry: Prick the base of the pastry with a fork to prevent it from puffing up too much during baking. 
- 
Grate and Sprinkle Cheese: Evenly sprinkle the grated Grana Padano cheese over the base of the pastry. 
- 
Bake the Pastry: Preheat the oven to 180°C (350°F) in static mode. Bake the pastry for about 30 minutes or until golden and crisp.

Prepare the Confit Tomatoes: While the pastry bakes, wash and dry the cherry tomatoes. Cut each tomato in half and arrange them on a baking sheet lined with parchment paper.

Season the Tomatoes: Drizzle the tomatoes with olive oil, sprinkle with fine salt, lemon zest, and a light dusting of oregano. Use a sifter to distribute the seasoning evenly.

Bake the Tomatoes: Place the tomatoes in the oven and bake for about 25-30 minutes, or until they are tender and slightly caramelized.

Assemble the Tart: Once the puff pastry is golden and crisp, remove it from the oven. Let it cool for a few minutes before transferring it to a cutting board.

Add the Garnishes: Arrange the confit tomatoes on top of the tart base. Add the bread knots (pre-cooked) on top, and finish by garnishing with fresh basil leaves.
