Ingredients:

  • 1 cup low-fat vanilla yogurt
  • 1/4 cup sugar
  • 1/4 cup margarine
  • 1 cup graham cracker crumbs

  • 1/4 cup orange juice
  • 3 golden delicious apples, peeled and thinly sliced
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 3 packages fat-free cream cheese
  • 3 eggs
  • 1 cinnamon stick
  • 1/3 cup sundae syrup, plus 2 tbsp for drizzling

Instructions:

Step Description
1 Place a colander in a 2-quart glass measure or bowl. Line the colander with 4 layers of cheesecloth, allowing it to extend over the edge of the bowl. Spoon the yogurt into the colander, cover loosely with plastic wrap, and refrigerate for 12 hours.
2 After 12 hours, spoon the yogurt cheese into a bowl, discarding the liquid. Cover and refrigerate.
3 Preheat your oven to 350ยฐF (175ยฐC).
4 In a bowl, combine 1/4 cup sugar, margarine, and egg white. Beat at medium speed until blended. Add the graham cracker crumbs and cinnamon, stirring well. Firmly press the mixture into the bottom and 1 1/2 inches up the sides of a 9-inch springform pan coated with cooking spray. Bake for 10 minutes and let cool.
5 Lower the oven temperature to 300ยฐF (150ยฐC).
6 In a large nonstick skillet, combine brown sugar and orange juice. Bring to a boil. Add the sliced apples and cook for 8 minutes until tender and the liquid evaporates, stirring occasionally. Set aside.
7 In a mixing bowl, combine the yogurt cheese, 1/2 cup sugar, cornstarch, vanilla extract, salt, and cream cheese. Beat at medium speed until smooth. Add the eggs one at a time, beating well after each addition.
8 Spoon the cooked apple mixture into the prepared pan. Pour the cheese mixture over the apples and top with 1/3 cup sundae syrup. Use a knife to swirl the mixture for a marbled effect.
9 Bake at 300ยฐF (150ยฐC) for 1 hour until almost set. Turn off the oven and loosen the cake from the sides of the pan using a narrow metal spatula or knife. Let the cheesecake stand in the oven with the door closed for 40 minutes.
10 Remove the cheesecake from the oven and let it cool to room temperature. Cover and chill for at least 8 hours.
11 Before serving, drizzle the remaining 2 tablespoons of sundae syrup over the top and garnish with a cinnamon stick if desired.
