Creamy Caramel Mocha Hot Chocolate

Milk Chocolate 140g
Sugar 100g
Fresh Heavy Cream (liquid) 50g
Water 20g
Cornstarch (cornflour) 10g

Instructions

  1. Make the Caramel
    Start by preparing the homemade caramel. In a thick-bottomed saucepan, pour in the sugar and place over medium heat. Allow the sugar to melt and slowly bubble, without stirring, until it takes on an amber hue, careful not to let it get too dark.

  2. Add the Cream
    Once the caramel has reached a nice amber color, remove the pan from the heat (or turn off the heat) and carefully pour in the fresh heavy cream. Do this slowly while whisking continuously to avoid splattering. The mixture will bubble up, so be cautious of the steam and the bubbles that will form.

  3. Set Aside Some Sauce
    Set aside a couple of tablespoons of this caramel sauce to decorate your hot chocolate later.

  4. Prepare the Hot Chocolate Base
    Finely chop the milk chocolate and return the caramel sauce pan to medium heat. Stir in the chopped chocolate and continue to whisk. Add in the cornstarch and allow the mixture to come to a gentle boil. The sauce will thicken in moments, so keep stirring until smooth and velvety.

  5. Add the Salt and Finish the Base
    Once the sauce has thickened, remove it from the heat and stir in a pinch of fine salt. This will balance the sweetness and enhance the flavors.

  6. Whip the Cream for Topping
    In a separate bowl, whip the remaining 80g of fresh cream with an electric whisk until soft peaks form. Transfer it into a piping bag for easy application.

  7. Assemble the Hot Chocolate
    Pour the rich caramel-chocolate sauce into two mugs. Top with a swirl of freshly whipped cream from the piping bag, and drizzle with the reserved caramel sauce for an extra touch of indulgence.

  8. Serve and Enjoy
