Instructions:

  1. Prepare the Panna Cotta:

    • Begin by preparing the panna cotta base. In a saucepan, combine 500g of fresh liquid cream with 70g of sugar. Add the orange zest, a small piece of fresh ginger, and the cinnamon stick. Place the pan over low heat and bring it close to a simmer, but be careful not to boil. Let the mixture infuse for at least 2 hours.
    • After the infusion, strain and remove the aromatics (ginger, cinnamon, and orange zest).
  2. Prepare the Gelatin:

    • Soak the 10g of gelatin sheets in cold water to soften them. Once softened, gently melt the gelatin into the cream mixture while stirring until fully dissolved.
  3. Set the Panna Cotta:

    • Pour the mixture into 4 small dessert molds, dividing it evenly (approximately 145g in each). Let the panna cotta set in the refrigerator for about 5 hours or until firm.
  4. Prepare the Caramel Flames:

    • In a separate pan, add the 200g of sugar and cook it over low heat. Stir occasionally until the sugar melts and turns into a golden caramel.
    • Lay a sheet of parchment paper on a flat surface and insert small skewers or toothpicks at regular intervals. Use a teaspoon to scoop the hot caramel and form small, flame-shaped pieces by placing the caramel onto the toothpicks. Let them harden for about 15 minutes.
  5. Whip the Cream:

    • Once the panna cotta has set, whip 200g of fresh liquid cream with 30g of powdered sugar until it forms soft peaks. Transfer the whipped cream into a piping bag fitted with a star-shaped nozzle.
  6. Assemble the Dessert:

    • To unmold the panna cotta, briefly dip the bottoms of the molds into hot water to loosen them. Gently remove the panna cotta from the molds and place each one on a serving plate.
    • Surround each panna cotta with 5 Pavesini biscuits, arranging them like a “candle stand.”
    • Pipe a swirl of whipped cream onto the top of each panna cotta, and place a caramel flame in the center, gently inserting it into the whipped cream.
  7. Serve and Enjoy:

    • Repeat the same process for all four panna cottas.
