Apple Loaf Bars (Lingotto di Mele)

Instructions:

  1. Prepare the Apples:
    Begin by thoroughly washing and drying the Renette apples. Then, cut them into quarters and blend until you achieve a smooth, homogeneous apple puree.

  2. Mix the Batter:
    In a large mixing bowl, crack the egg and add the brown sugar. Whisk together by hand until fully combined. Add the ground cinnamon to infuse a warming aroma into the batter. Sift the all-purpose flour and baking powder into the bowl and mix until the ingredients are well incorporated.

  3. Combine the Ingredients:
    Slowly pour in the sunflower oil, ensuring a smooth and consistent batter. Stir until everything is well combined.

  4. Prepare the Molds:
    Grease a silicone loaf mold or any small rectangular baking mold. Pour the prepared apple batter into the mold, ensuring it’s evenly distributed.

  5. Bake the Bars:
    Place the mold in a preheated oven and bake at 180°C (350°F) for approximately 30 minutes or until the batter is set and lightly golden.

  6. Prepare the Apple Garnish:
    While the cake is baking, peel and core the remaining Renette apple. Slice it thinly into delicate rounds.

  7. Add the Apple Garnish:
    When the baking time is almost complete (about 10 minutes remaining), remove the mold from the oven. Gently arrange the thin apple slices on top of each loaf bar. Sprinkle a light layer of brown sugar over the apple slices.

  8. Caramelize the Apples:
    Return the mold to the oven and set it to grill mode at 240°C (460°F) for 5 minutes or until the apples on top are beautifully caramelized.

  9. Serving:
    Allow the bars to cool slightly before serving. The top will have a lovely caramelized finish, and the inside will be soft, aromatic, and deliciously apple-infused.
