Caramelized Apple Pain Perdu Recipe

Category: Desserts
Servings: 4

Ingredients:

Ingredient Quantity
Apples 500g
Ground Cinnamon 1/2 teaspoon
Butter 30g
Sugar 20g
Moscato Wine 50ml
Stale Bread 12 slices
Eggs 2
Whole Milk 50ml
Sugar 20g
Vanilla Extract 1 teaspoon
Egg Yolks 4
Sugar 80g
Moscato Wine 4 tablespoons
Ground Cinnamon A pinch
Butter To taste

Instructions:

To prepare the Caramelized Apple Pain Perdu, start by caramelizing the apples:

  1. Peel, core, and slice the apples into thick slices.
  2. In a pan, melt the butter over medium heat and add the sugar. Stir until the sugar dissolves and forms a syrup.
  3. Pour the Moscato wine over the apples and sprinkle with ground cinnamon. Cook the apples in the syrup for about 10 minutes until they are soft and caramelized. Set aside.

Now, move on to making the Pain Perdu:

  1. In a bowl, crack the eggs and add the whole milk and vanilla extract. Whisk together until well combined.
  2. Slice the stale bread into pieces (not too large; if they’re big, you can cut them in half).
  3. Dip the bread slices into the egg mixture, making sure both sides are coated well.
  4. Heat a non-stick pan with a bit of butter and toast the soaked bread slices until golden brown on both sides. Flip them carefully using tongs.

While the bread is cooking, prepare the Zabaglione:

  1. In a heatproof bowl, whisk together the egg yolks and sugar. Place the bowl over a double boiler (simmering water) and whisk until the mixture becomes light and fluffy.
  2. Slowly add the Moscato wine, one tablespoon at a time, while continuing to whisk. Add the cinnamon and keep whisking until the mixture thickens. Set aside.

Now, assemble the dish:

  1. On a serving plate, stack three slices of the toasted bread.
  2. Place a few slices of the caramelized apples on the plate next to the bread.
  3. Drizzle with the zabaglione sauce and serve warm.

This indulgent and decadent Caramelized Apple Pain Perdu will surely delight your taste buds. The combination of warm caramelized apples, soft, golden-brown pain perdu, and the sweet zabaglione sauce creates the perfect dessert for any occasion. Enjoy!
