Ingredients
For the waffles:
- 1 Flaxmeal Egg Replacer (or 1 egg)
- 3/4 cup Milk
- 1/4 cup Oil
- 2 teaspoons Sugar
- 2 teaspoons Baking powder
- 1/8 teaspoon Salt
- 1/4 teaspoon Vanilla Extract
- 1 cup Whole Wheat Flour
For the caramelized bananas:
- 2 tablespoons Unsalted Butter
- 2 Ripe Bananas, thickly sliced diagonally
- 1/4 cup Brown Sugar (Demerara Sugar)
- 1 teaspoon Cinnamon Powder (Dalchini)

Instructions
- Preheat your waffle iron.
- In a large bowl, beat the egg (or egg replacer) until fluffy. Add the milk, vegetable oil, sugar, baking powder, salt, and vanilla extract. Beat until smooth.
- Gradually stir in the whole wheat flour until the batter is smooth and free of lumps.
- Grease the waffle iron with a little oil, then pour the batter onto the hot waffle iron. Cook until golden brown. Remove the waffles and set aside.
- For the caramelized bananas:
- Heat a large non-stick frying pan over medium-high heat. Once hot, add the butter and allow it to melt.
- Add the sliced bananas to the pan and cook for about 30 seconds without stirring, allowing them to brown slightly.
- Gently turn the bananas using a spatula, then sprinkle with brown sugar and cinnamon. Continue to cook, shaking the pan, for another minute until the sugar is melted and the bananas are caramelized, but still solid. Remove from heat.
- To serve:
- Place the waffles on a serving platter, spoon the caramelized bananas over the top, and drizzle with maple syrup or honey.
