Carrot and Onion Upside-Down Savory Tart

Ingredients:

Shortcrust pastry (Pasta brisé) 1 kg
Carrots 1 kg
White onions 500 g
Brown sugar 2 tbsp
Fennel seeds to taste
Salt to taste

Black pepper to taste
Extra virgin olive oil to taste

Instructions:

  1. Prepare the Onions: Begin by thoroughly cleaning the white onions, then slice them thinly. Heat a generous amount of extra virgin olive oil in a pan and add the onions. Sauté until they are halfway cooked, then stir in a tablespoon of brown sugar. Allow the onions to soften and caramelize, absorbing the sweetness from the sugar.

  2. Prepare the Carrots: While the onions are cooking, clean and peel the carrots, then cut them into approximately 3 cm (1 inch) long chunks. Bring a pot of water to a boil, and cook the carrot pieces for about 20 minutes, until they are tender yet firm.

  3. Roast the Carrots: Once the carrots are cooked, carefully arrange them in a baking dish, placing them vertically and close together. Brush the tops of the carrot chunks with a little olive oil. Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes, or until the surface of the carrots is golden and slightly crisp.

  4. Assemble the Tart: Roll out the shortcrust pastry and fit it over the carrots, pressing the edges down gently. Once the carrots are roasted and the pastry is ready, place the whole tart in the oven and bake for an additional 15-20 minutes, or until the pastry is golden brown and crispy.

  5. Serve the Tart: After removing the tart from the oven, let it cool slightly. Then, carefully flip it over onto a serving platter with a decisive motion to reveal the beautiful caramelized onions and carrots. Sprinkle with a pinch of black sea salt from Cyprus to enhance the flavors.
