Instructions

  1. Prepare the Raisins:
Begin by placing the raisins in a small bowl and cover them with warm water. Let them soak for about 20 minutes to rehydrate.

  2. Prepare the Onions:
While the raisins soak, peel the cipolline onions. Once peeled, set them aside.

  3. Blanch the Cipolline Onions:
Fill a medium saucepan with salted water and bring it to a boil. Once boiling, add the cipolline onions and blanch them for 2 minutes. After blanching, drain the onions and set them aside.

  4. Cook the Cipolline Onions:
In a large skillet, melt the butter over medium heat. Add the 100g of water to the pan, then carefully add the drained raisins, ensuring they’re well distributed across the surface. Season with salt and black pepper to taste. Cover the pan and cook for about 7 minutes, allowing the onions to soften and absorb the flavors.

  5. Deglaze with Marsala:
After 7 minutes, remove the lid and pour in the Marsala wine. Stir gently and let it simmer for a few minutes to allow the wine to evaporate and infuse the onions and raisins with its flavor.

  6. Finish the Cooking:
Once the wine has evaporated, cover the skillet again and cook for an additional 7 minutes. The cipolline onions should now be tender, and the cooking liquid will have reduced significantly.

  7. Serve:
Once the onions are perfectly tender, serve them hot as a delicious and unique side dish to complement your main course.

These Cipolline with Raisins are an elegant and flavorful side dish, featuring the slight sweetness of raisins and the richness of Marsala. Perfect for holiday meals, special occasions, or as a unique accompaniment to roast meats, they offer a fresh twist on classic onion recipes.
