Ingredients

  • 1/4 cup cold water
  • 1 cup granulated sugar
  • 1/2 cup warm water
  • 6 oranges or clementines

Instructions

  1. Prepare the Caramel Sauce:

    • In a heavy-based saucepan, combine cold water and granulated sugar.
    • Slowly bring the mixture to a boil over medium heat, stirring continuously until the sugar completely dissolves. It’s crucial that the sugar dissolves fully before the mixture starts boiling.
    • Once boiling, refrain from stirring. Instead, use a pastry brush dipped in water to wash down any sugar crystals from the sides of the pan. Continue boiling until the sugar turns into a rich, dark caramel color.
  2. Add Warm Water:

    • Carefully add the warm water to the caramelized sugar. Be cautious as it may splutter.
    • Return the pan to heat and stir gently until the caramel dissolves completely into the water. Set aside the caramel sauce to cool.
  3. Prepare the Oranges:

    • Peel all the oranges, removing as much of the white pith as possible.
    • Place the peeled oranges in a bowl and pour the cooled caramel sauce over them. Gently turn the fruit to ensure each piece is coated with the sauce.
  4. Chill and Garnish:

    • Chill the caramelized oranges thoroughly in the refrigerator.
    • Meanwhile, take the peel of one orange and cut it into matchstick-sized pieces. Boil these pieces until tender, then refresh them in cold water and drain.
    • Sprinkle half of the cooked zest over the caramelized oranges in the bowl and stir gently.
  5. Serve:

    • To serve, portion the chilled caramelized oranges into individual dessert bowls.
    • Garnish each serving with additional zest for an extra burst of citrus flavor.
