Mexican Flan (Baked Caramel Custard) Recipe

Instructions:

  1. Prepare Caramel:

    • Heat 1/2 cup of sugar in a heavy skillet or saucepan over medium heat, stirring constantly until it melts and turns a dark golden color.
    • Remove from heat and immediately pour the caramel into a 4 1/2 cup metal ring mold, swishing it around to evenly coat the bottom of the mold.
  2. Prepare Flan Mixture:

    • In a large mixing bowl, lightly beat the eggs.
    • Stir in the milk, 1/2 cup of sugar, vanilla extract, and grated orange peel until well combined.
  3. Bake:

    • Place the caramel-coated ring mold into a larger baking pan and place it on an oven rack.
    • Pour the egg mixture into the ring mold.
    • Pour the hottest tap water possible around the ring mold to a depth of 1 inch.
    • Bake at 325°F for close to 1 hour or until a knife inserted into the center comes out clean.
  4. Cool and Chill:

    • Once baked, remove the flan from the oven and cool it on a wire rack.
    • Chill the flan in the refrigerator for at least 3 1/2 hours to set.
  5. Unmold and Serve:

    • To unmold the flan, loosen the edges with a spatula, gently slipping the spatula down the sides to let air in.
    • Place a serving platter over the mold and carefully flip it to allow the flan to slip onto the platter.
    • Spoon any remaining caramel from the mold on top of the flan.
    • Optionally, garnish with sliced fruit piled in the center before serving.
