Ingredients:

  • 1/8 teaspoon chipotle chile in adobo
  • 1/4 teaspoon garlic granules
  • 1/2 cup unsalted butter
  • 2 large sweet onions, thinly sliced
  • 7 cloves garlic, minced
  • 2 cans sliced water chestnuts, drained
  • Slivered almonds for garnish

Instructions:

Step Description
1 Preheat your oven to 350 degrees Fahrenheit and generously butter a 9 by 13-inch baking dish.
2 In a large bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until well combined.
3 In a separate bowl, combine the flour, sugar, baking powder, cayenne pepper, chipotle chile in adobo, and garlic granules, stirring until all ingredients are evenly incorporated.
4 Gradually add the flour mixture to the egg mixture, stirring until smooth. Set aside.
5 In a large skillet over medium-high heat, melt the unsalted butter. Add the thinly sliced sweet onions and cook, stirring occasionally, until they are golden brown and caramelized, about 10 to 15 minutes.
6 Stir in the minced garlic and drained water chestnuts, continuing to cook for an additional 5 minutes until the garlic is fragrant and the water chestnuts are heated through.
7 Combine the caramelized onion mixture with the egg and flour mixture, stirring until evenly distributed.
8 Pour the mixture into the prepared baking dish, spreading it out evenly.
9 Sprinkle the top of the pudding with slivered almonds for an extra crunch and visual appeal.
10 Bake in the preheated oven for 30 to 35 minutes, or until the pudding is set and the top is golden brown.
11 Once done, remove from the oven and let it cool slightly before serving.
