Instructions:

To prepare Onion Jam Puff Pastry Squares, begin by making the onion jam. Start by peeling the Red Tropea onions and slicing them thinly on a cutting board. Place the onion slices into a large mixing bowl and add the granulated sugar, brown sugar, and white wine (or rosé, if preferred). Add in the cognac and a bay leaf, then stir everything well to combine. Cover the bowl with plastic wrap and let the mixture rest for at least 6 hours in a cool, dry place, stirring occasionally.

After the resting period, transfer the mixture into a saucepan and simmer on low heat for about 25-30 minutes, stirring occasionally, until the jam thickens and reaches a spreadable consistency. Once done, your onion jam will be ready.

While the jam is cooking, prepare the puff pastry. Roll out the pre-made puff pastry on a flat surface and use a cookie cutter to cut out 8×8 cm squares. In a separate bowl, whisk the egg and set it aside.

With the remaining pastry, cut it into 1cm wide strips, about 8 cm long. Place these strips along the four edges of each square to create a border. Brush the edges of the squares and the pastry strips with the beaten egg, then lightly score the pastry with a toothpick to add decorative lines. Also, prick the center of each square with a fork to prevent puffing during baking.

Bake the squares according to the puff pastry package instructions or until golden and crisp. Once the squares are cooled, gently break the crust formed on the bottom with your fingers to create a delicate opening.

Fill each pastry square with the homemade onion jam, and serve these delectable, savory bites warm or at room temperature. Enjoy the rich flavors of the caramelized onion jam paired perfectly with the crisp pastry!
