Instructions

Step 1: Marinate the Chicken

  1. Start by washing the chicken breasts thoroughly. Make a few slits on the surface of the chicken to allow the marinade to penetrate.
  2. In a mixing bowl, combine the ginger paste, garlic paste, salt, paprika powder, and rosemary leaves. Mix well until the ingredients are evenly blended.
  3. Place the chicken breasts into the bowl, and rub the marinade all over the chicken, ensuring that each piece is coated well.
  4. Cover the chicken and let it marinate for about 30 minutes. This allows the flavors to infuse and the chicken to become tender.

Step 2: Grill the Chicken

  1. Heat a grill pan over medium-high heat and lightly brush it with oil.
  2. Place the marinated chicken breasts onto the hot pan, cooking each side for about 2-3 minutes until golden brown and cooked through. Check the internal temperature of the chicken to ensure it reaches at least 165ยฐF (74ยฐC).
  3. Once the chicken is cooked, remove it from the pan and set it aside.

Step 3: Prepare the Caramelised Onion Rosemary Sauce

  1. In the same pan, add the butter and heat over medium flame.
  2. Add the sliced onions and sautรฉ, stirring occasionally, until they turn a deep golden brown and caramelize. This should take about 10-12 minutes.
  3. As the onions are caramelizing, add the rosemary sprigs, salt to taste, and sugar. Continue to cook, stirring occasionally, until the onions are richly caramelized and soft.
  4. Add the red chili flakes, honey, mixed herbs, and black pepper powder to the pan, giving everything a good stir to combine.
  5. In a small bowl, mix the cornstarch with 1/3 cup of water to form a smooth slurry.
  6. Once the onion mixture has come together, reduce the heat and pour in the cornstarch slurry, stirring constantly. Let the sauce simmer for a few minutes until it thickens to your desired consistency.
  7. Once the sauce has reached the right thickness, remove it from the heat.

Step 4: Serve the Dish

  1. Place the grilled chicken breasts onto serving plates and pour the caramelized onion rosemary sauce generously over the top.
  2. Serve with a side of Herbed Butter Rice with Rosemary & Thyme, Steamed Vegetables with Chilli Lime Butter, and a refreshing Cinnamon Spiced Orange Iced Tea for a complete meal.
  3. For dessert, enjoy a Healthy Fruit & Nut Watermelon Dessert with Greek Yogurt to finish off the meal on a sweet and light note.

This Caramelised Onion Rosemary Chicken is perfect for a cozy dinner at home or when you want to impress guests with a gourmet-style meal. The combination of tender, grilled chicken and rich, flavorful sauce is sure to satisfy all your taste buds. Enjoy this dish with a variety of sides and a delicious beverage to create a complete dining experience.

Tips & Variations:

  • For added depth of flavor, consider marinating the chicken overnight for even more infused seasoning.
  • You can substitute the chicken with turkey breasts or boneless, skinless chicken thighs for a different texture and flavor.
  • The caramelized onion sauce can be made in advance and stored in the refrigerator for up to 2 days. Reheat it gently before serving.
