Instructions:

  1. Prepare the Onions: Start by peeling and slicing the white onions into thin rings, about 3-4 mm in thickness. This will help them caramelize evenly and absorb the flavors well.

  2. Caramelize the Onions: In a large pan, heat a splash of extra virgin olive oil over medium heat. Add the sliced onions to the pan and sauté them for a few minutes, stirring occasionally to ensure they don’t burn.

  3. Add Water and Sugar: Once the onions have softened, pour in the water and sprinkle in the brown sugar. Stir the mixture gently, allowing the sugar to dissolve. Cover the pan with a lid and let it cook for about 15-20 minutes, allowing the onions to caramelize and become tender. After the onions have cooked down, remove the lid, and let the mixture simmer until it thickens slightly. Stir in the balsamic vinegar and a pinch of salt for added flavor. Let it cook for another few minutes until you have a rich, golden, caramelized onion mixture.

  4. Prepare the Taleggio: While the onions are cooking, slice the Taleggio cheese into thin slices, approximately ½ cm thick. This cheese has a wonderful creamy texture that will melt perfectly.

  5. Heat the Piadina: In a separate pan, heat the whole wheat piadina on both sides for about 30 seconds, just enough to warm it through and get a slight crisp on the surface.

  6. Assemble the Piadina: Once your piadina is warm, place the slices of Taleggio cheese on one half of the piadina. Cover it with a lid to help the cheese melt smoothly.

  7. Add the Caramelized Onions: Once the cheese is melted, spoon the caramelized onions generously over the cheese.
