Red Tropea Onions 80g
Sugar 20g

Instructions:

  1. Prepare the Caramelized Onions:
    Start by preparing the caramelized onions. Slice the red Tropea onions into thin rings. Place them in a pan with the sugar and water, then cook over low heat for about 10 minutes, stirring occasionally. Allow the liquid to evaporate, leaving the onions beautifully golden and caramelized.

  2. Cook the Cherry Tomatoes:
    While the onions are caramelizing, halve the cherry tomatoes. Heat a splash of extra virgin olive oil in a pan over medium-high heat, and add the tomatoes along with a few sprigs of fresh thyme. Sauté them for about 5 minutes until they are nicely braised and tender.

  3. Toast the Bread:
    Next, toast the slices of sandwich bread on a hot grill or in a toaster until they are golden brown and crispy. Once done, transfer them to a cutting board.

  4. Assemble the Toasts:
    On two of the toasted bread slices, spread a generous amount of crescenza cheese. Then, layer the sautéed cherry tomatoes and the caramelized onions on top of the cheese. Sprinkle a pinch of oregano for added flavor.
