Gluten-Free Tuna and Cheese Sandwich

Ingredients:

Gluten-free bread 3 slices
Fresh spring onion 4 stems
Acacia honey 15g
Fine salt 3g
Raspberry vinegar 15g
Arugula (rocket) 30g
Dried chili pepper to taste
Asiago cheese 50g
Canned tuna in oil 100g
Extra virgin olive oil to taste

Instructions:

  1. Begin by preparing the spring onions: trim the roots and clean them thoroughly.
  2. Heat a drizzle of extra virgin olive oil in a pan over medium heat for a few seconds. Add the spring onions and sautรฉ for a couple of minutes.
  3. Add the acacia honey, salt, raspberry vinegar, and dried chili to the pan. Stir well to combine, allowing the onions to caramelize for about 5 minutes. Remove from heat and set aside.
  4. Slice the Asiago cheese thinly and set aside for easy layering.
  5. In the same pan, add another drizzle of olive oil and heat it to medium. Place 2 slices of gluten-free bread in the pan and toast both sides for about 2 minutes until golden and crispy.
  6. Once toasted, place a slice of Asiago cheese on each piece of bread. Let the cheese melt slightly.
  7. Now it’s time to assemble the sandwich: take one slice of bread with melted cheese and top it with half of the fresh arugula.
  8. Cover with the second slice of bread, also topped with Asiago cheese.
  9. Add the remaining arugula, canned tuna, and the caramelized spring onions from earlier.
  10. Top off with the final slice of toasted bread and press lightly.
  11. Cut the sandwich in half and serve immediately for the freshest taste.
