  • 2 parsnips

Instructions:

Step Description
1 Preheat your oven to 200°F (400°C).
2 Place onions, parsnips, and potatoes in a greased baking dish. Sprinkle them with soft brown sugar and drizzle olive oil over them evenly.
3 Bake the vegetables in the preheated oven for about 30 minutes or until they are tender and caramelized.
4 Once the vegetables are roasted, transfer them to a large pot. Add curry powder, ground coriander, cardamom pods, salt, and pepper. Cook gently over medium heat for 2 minutes, allowing the spices to release their flavors.
