Instructions:

To prepare this delightful Peach Tarte Tatin, start by making the buttery shortcrust pastry (pasta brisée). Begin by placing the flour, cold butter cut into pieces, and a pinch of salt into the bowl of a food processor fitted with a blade. Pulse the mixture for about 1-2 minutes until the dough comes together. Once it forms into a crumbly texture, transfer it to a work surface and briefly knead it with your hands to bring it together into a smooth dough. Wrap the dough in plastic wrap and set it aside to chill while you prepare the fruit.

Next, wash and dry the peaches. Slice them in half, remove the pit, and cut each half into 8 wedges. Set the peaches aside.

For the caramel topping, take a 20cm cast-iron skillet and add the sugar and 30g of water. Place the skillet over medium heat and cook, covered, for about 5 minutes, ensuring the caramel cooks evenly and forms a golden-brown color.

Once the caramel has formed, remove the skillet from the heat and set it on a flat surface. Arrange the peach wedges in a circular pattern, placing two layers of peaches over the caramel to create a beautiful presentation.

Roll out the chilled shortcrust pastry on a lightly floured surface until it’s thin and large enough to cover the entire skillet. Gently place the dough over the peaches, pressing down lightly along the edges to seal it around the caramelized fruit. Use a fork to prick small holes in the center of the dough to allow steam to escape as it bakes.

Carefully place the skillet on the grill or into an oven preheated to moderate heat. Bake the Peach Tarte Tatin for 30-35 minutes, or until the pastry is golden and crispy.

Once out of the oven, allow the tart to cool for a few minutes before inverting it onto a serving plate. The caramel will drizzle over the peaches as it cools, creating a glossy, delicious finish.
