Caramelized Tomato Tart Recipe

Instructions

  1. Prepare the Savory Shortcrust Pastry
    Start by preparing the savory shortcrust pastry. Place the all-purpose flour, fresh thyme, fine salt, sugar, and grated Grana Padano cheese into a food processor with blades. Add the cold butter, cut into small pieces. Pulse the mixture until it resembles coarse crumbs.

  2. Form the Dough
    Transfer the crumbly mixture into a bowl, then add the egg yolks. Mix until a dough begins to form. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.

  3. Prepare the Filling
    Slice the tomatoes into approximately 1 cm thick slices. Similarly, slice the mozzarella cheese and allow it to drain in a colander to remove excess moisture.

  4. Caramelize the Tomatoes
    In a pan, melt the butter over low heat. Add the garlic, fresh thyme, oregano, brown sugar, and honey. Stir the mixture until the sugar has dissolved and begins to caramelize, coating the tomatoes. Once the tomatoes are evenly coated in the caramelized mixture, remove from heat and set aside.

  5. Roll Out the Pastry
    After chilling, remove the pastry dough from the fridge. Roll it out on a lightly floured surface to about 1 cm thickness. Line a 30 cm tart pan with parchment paper that has been lightly dampened and wrung out.

  6. Assemble the Tart
    Gently roll the dough onto a rolling pin, then unroll it onto the tart pan, being careful not to tear the dough. Press the dough into the bottom and sides of the tart pan. Trim any excess pastry from the edges using a sharp knife or pastry cutter. Arrange the caramelized tomato slices and mozzarella cheese in overlapping circles, starting from the edges and working towards the center. Sprinkle the top with dried oregano.

  7. Bake the Tart
    Preheat the oven to 180°C (static) or 160°C (fan-forced). Bake the tart for 40 minutes (or 30 minutes if using a fan-forced oven), until the pastry is golden and crisp.

  8. Serve
    Once baked, remove the tart from the oven and let it cool for a few minutes before serving. Slice and enjoy the delightful combination of savory caramelized tomatoes and melted mozzarella!
