Instructions:

  1. Prepare the Zucchini Flowers:
    Start by preparing the zucchini flowers. Gently remove the stems, external pistils, and inner pistils. Cut the flowers in half and add a few fresh oregano leaves. Give them a quick turn and set aside.

  2. Prepare the Tomatoes:
    Wash the cherry tomatoes thoroughly, dry them, and cut them in half. In a pan, pour a drizzle of extra virgin olive oil, a pinch of fine salt, and the brown sugar. Turn the heat on medium-high and place the tomatoes in the pan, cut side down. Let them cook undisturbed for about 10 minutes, until they become caramelized. Once done, carefully remove the tomatoes from the pan using tongs and set aside.

  3. Make the Taleggio Sauce:
    For the Taleggio sauce, cut 100g of Taleggio cheese into small cubes. In a small saucepan, heat the fresh cream over low heat. Add the Taleggio cubes and stir until the cheese is fully melted, creating a smooth sauce. Set aside.

  4. Prepare the Green Beans:
    While the tomatoes are cooking, clean the green beans and cut them in half. Boil a pot of water, then blanch the green beans in it for a few minutes. This will help them retain their vibrant color and crispness.

  5. Prepare the Friselle:
    Briefly dip the friselle (twice-baked bread) in water to soften them slightly, then transfer them to a serving plate.

  6. Assemble the Dish:
    Place the caramelized tomatoes and the blanched green beans on top of the friselle. Add fresh arugula, a sprinkle of black pepper, and a dash of fresh oregano.

  7. Serve:
    Drizzle the creamy Taleggio sauce over the friselle and vegetables. Enjoy this delicious and refreshing appetizer!
