Ingredients:
- 2 tbsp olive oil
- 1/2 onion, diced
- 1/4 green pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 3/4 cup water
- 1 tsp oregano
- 1/4 tsp sugar
- 1 tbsp cooking wine
- 1 tbsp cider vinegar
- 2 cups cooked white rice
Instructions:
- Heat olive oil: In a medium saucepan, heat the olive oil over medium heat.
- Sauté vegetables: Add diced onion, green pepper, and minced garlic to the saucepan. Sauté until tender, about 8-10 minutes.
- Add remaining ingredients: Once the vegetables are tender, add the drained and rinsed black beans, water, oregano, sugar, cooking wine, and cider vinegar to the saucepan. Stir until well combined.
- Simmer: Bring the mixture to a boil, then reduce the heat to low. Allow the mixture to simmer uncovered for about 20 minutes, or until the sauce has reduced slightly.
- Serve: Spoon the black bean mixture over cooked white rice.
- Optional: For added flavor and texture, mash a few of the beans with the back of a spoon to thicken the sauce.
- Note: If you don’t have Sazòn Goya seasoning, you can substitute with a mixture of ground cumin, chicken bouillon, and garlic salt to taste.
