Ingredients:

  • 2 tbsp olive oil
  • 1/2 onion, diced
  • 1/4 green pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 3/4 cup water
  • 1 tsp oregano
  • 1/4 tsp sugar
  • 1 tbsp cooking wine
  • 1 tbsp cider vinegar
  • 2 cups cooked white rice

Instructions:

  1. Heat olive oil: In a medium saucepan, heat the olive oil over medium heat.
  2. Sauté vegetables: Add diced onion, green pepper, and minced garlic to the saucepan. Sauté until tender, about 8-10 minutes.
  3. Add remaining ingredients: Once the vegetables are tender, add the drained and rinsed black beans, water, oregano, sugar, cooking wine, and cider vinegar to the saucepan. Stir until well combined.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low. Allow the mixture to simmer uncovered for about 20 minutes, or until the sauce has reduced slightly.
  5. Serve: Spoon the black bean mixture over cooked white rice.
  6. Optional: For added flavor and texture, mash a few of the beans with the back of a spoon to thicken the sauce.
  7. Note: If you don’t have Sazòn Goya seasoning, you can substitute with a mixture of ground cumin, chicken bouillon, and garlic salt to taste.

Serving Suggestions:

Recipe Tips:

  • For a quicker cooking time, use canned black beans. Just be sure to drain and rinse them well before adding to the dish.
  • Customize the spice level to your preference by adjusting the amount of garlic, oregano, and cooking wine.
