Ingredients:

  • 9 cups white flour
  • 6 tablespoons white sugar
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 3/4 cup butter
  • 2 eggs
  • 3 tablespoons sugar
  • 1/2 cup milk

Recipe Yield:

Instructions:

  1. Mix dry ingredients with butter: In a large mixing bowl, combine the white flour, white sugar, salt, and baking powder. Cut in the butter until the mixture resembles coarse crumbs.

  2. Slowly add liquid: In a separate bowl, whisk together the eggs, sugar, and milk until well combined. Gradually add this mixture to the dry ingredients, stirring until a dough forms.

  3. Knead to a smooth ball and let stand: Turn the dough out onto a lightly floured surface and knead it until it forms a smooth ball. Cover the dough with plastic wrap and let it rest for 20 minutes to allow the gluten to relax.

  4. Roll out thinly on lightly floured board: After resting, roll out the dough thinly on a lightly floured surface. Aim for a thickness that will yield tender and flaky pastries.

  5. Cut into rounds: Using a biscuit cutter or a glass, cut the rolled-out dough into rounds of your desired size.

  6. Add Pastechi filling: Spoon a generous teaspoon of the prepared Pastechi filling onto each round of dough. (The filling recipe is posted separately.)

  7. Fold rounds in half; seal and crimp edges: Carefully fold each round of dough in half to encase the filling, then use a fork to seal and crimp the edges firmly.

  8. Fry in oil until golden brown: Heat oil in a deep fryer or large skillet to 350°F (175°C). Fry the pastechis in batches until they are golden brown on both sides, about 3-4 minutes per side.

  9. Drain on paper towels: Once fried, transfer the pastechis to a plate lined with paper towels to drain off any excess oil.

  10. Serve warm and with ketchup, if desired: These pastechis are best enjoyed warm, straight from the fryer. Serve them with a side of ketchup for dipping, if desired.
