Ingredients:
- 1 1/2 lbs ground beef
- 1 tbsp olive oil
- 2 onions, chopped
- 2-3 garlic cloves, minced
- 2 1/2 tsp ground cumin
- 1 tsp paprika
- 1 tbsp chili powder
- 1 tbsp white sugar
- 1 tsp salt
- 1/2 tsp ground cloves
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 tbsp tomato paste
- 1/4 cup water
- 1 tbsp vinegar
- Chopped fresh cilantro (optional, for garnish)
Instructions:
-
Brown the Ground Beef: In a large, deep frying pan over medium-high heat, brown the ground beef until fully cooked. Drain off any excess fat and set the beef aside.
-
Prepare the Dutch Oven: Coat a large Dutch oven with cooking spray and place it over medium-high heat. Add the olive oil and heat until shimmering.
-
Sauté Aromatics: Add the chopped onions and minced garlic to the Dutch oven. Cook, stirring occasionally, until the onions are tender and translucent.
-
Add Seasonings: Stir in the chopped peppers and cook until they begin to soften. Season the mixture with ground cumin, paprika, chili powder, sugar, salt, and ground cloves. Stir well to coat the vegetables evenly with the spices.
-
Incorporate Tomatoes and Beans: Add the canned diced tomatoes (with their juices) and the drained and rinsed kidney beans, black beans, and cannellini beans to the Dutch oven. Stir to combine.
-
Simmer: Pour in the water to ensure all ingredients are covered. Bring the chili to a boil, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.
-
Add Meat and Tomato Paste: Stir in the cooked ground beef and tomato paste. Bring the chili back to a boil, then reduce the heat to low. Let it simmer uncovered for another 30 minutes, allowing the flavors to meld together.
-
Final Touch: Remove the Dutch oven from the heat and stir in the vinegar. This adds a tangy brightness to the chili.
-
Serve: Ladle the Jamaica Me Crazy Chili into bowls. If desired, garnish each serving with chopped fresh cilantro for a pop of freshness and color.
