Ingredients:

1 Russet potato
1 Sweet potato
1 Corn
1 Dijon-style mustard
2 tbsp Fresh lime juice
3 tbsp Fresh cilantro
1 Garlic clove
3 tbsp Canola oil
1/2 tsp Salt
1/4 tsp Ground black pepper
1 Cucumber
1/2 Red onion
1/4 cup Peanuts

Instructions:

  1. Prepare Potatoes: Place the Russet potatoes into a large saucepan, and cover with salted water. Bring to a boil, then reduce the heat and simmer for 10 minutes.

  2. Add Sweet Potato: Add the sweet potato to the saucepan and continue cooking for about 15 minutes more, or until both potatoes are tender.

  3. Incorporate Corn: Add corn kernels to the potatoes and cook for another 30 seconds. Drain the potatoes and corn in a colander.

  4. Cool Vegetables: Fill the saucepan with cold water and drop the vegetables into the water. Let them cool for 5 minutes, then drain again.

  5. Prepare Dressing: In a large serving bowl, whisk together the Dijon-style mustard, lime juice, fresh cilantro, and garlic. Slowly whisk in the canola oil. Mix in salt and black pepper.

  6. Combine Ingredients: Cut the cooled potatoes into 1-inch cubes and add them to the dressing along with cucumber and red onion. Toss well to coat everything evenly.

  7. Serve: Serve the Caribbean Sweet Potato Salad at room temperature or chilled. Just before serving, sprinkle the peanuts on top for an added crunch.
