Instructions

Step 1: Preparing the Yogurt Base

To begin, take a bowl and add the yogurt (curd) and salt. Whisk it thoroughly for a few minutes until the yogurt is smooth and free from lumps. Once done, set it aside.

Step 2: Preparing the Amla (Gooseberry)

Cut the amla (gooseberries) in half and remove the seeds. In a separate bowl, toss the amla pieces with split mustard seeds (rai kuria), red chili powder, and salt. Let this mixture rest for about 15 minutes to allow the flavors to marinate.

Step 3: Mixing the Raita
