Carrot Bread Bites

Ingredients

Buckwheat flour 50g
All-purpose flour 450g
Water 250ml
Carrots (grated) 150g
Fresh yeast 12g
Extra virgin olive oil 15g

Instructions

  1. Prepare the Carrots
    Start by trimming the ends of the carrots. Grate them finely using the smallest holes on a grater, collecting the shredded carrots in a bowl.

  2. Activate the Yeast
    In a separate bowl, dissolve the fresh yeast in lukewarm water and stir gently until fully dissolved.

  3. Mix Dry Ingredients
    In a large mixing bowl, combine both the buckwheat flour and all-purpose flour. Pour the activated yeast mixture into the flour mixture and start mixing.

  4. Incorporate the Carrots
    Add the 150g of grated carrots into the mixture, followed by the salt. Knead the dough in the bowl using your hands until all the ingredients are well combined.

  5. First Rise
    Transfer the dough onto a lightly floured surface and shape it into a ball. Coat the inside of a large glass bowl with a bit of olive oil and place the dough inside. Cover with plastic wrap and let it rise for about an hour, or until it has doubled in size.

  6. Shaping the Bites
    After the dough has risen, flour the work surface again and gently transfer the dough. Using a dough scraper (or a knife), divide the dough into strips vertically.

  7. Shape and Garnish
    Shape each strip into bite-sized pieces. Sprinkle the remaining grated carrot on top of each piece as a garnish, pressing them lightly to adhere.

  8. Second Rise and Baking
    Let the shaped dough rest for 30 minutes. Preheat the oven to 180ยฐC (350ยฐF). Bake the carrot bread bites for about 20-25 minutes or until golden brown.

  9. Serve and Enjoy
    Once baked, remove the bread bites from the oven and let them cool slightly before serving. Enjoy them warm with a drizzle of olive oil or your favorite dip!
