Instructions:

- Trim the zucchini and slice them in half lengthwise, then cut them into half-moon shaped pieces.
- Peel and finely chop the spring onions.
- Cut the cherry tomatoes into quarters.
- Slice the black olives into rings.
- Cut the cod fillet in half, then dice it into small cubes.

- Heat the olive oil in a large non-stick pan over medium heat. Once hot, add the spring onions and sauté them for 4-5 minutes until soft and translucent.
