Ingredients

  • 1 cup wild rice
  • 4 cups chicken broth
  • 3 tbsp olive oil
  • 1 1/2 cups diced red bell peppers

Instructions

Step Description
1 In a strainer, rinse the wild rice under cold water and drain well.
2 In a 3-quart saucepan, combine the wild rice and chicken broth. Bring to a boil over high heat.
3 Reduce the heat and simmer, covered, for 45-50 minutes, or until the rice is tender.
4 Drain any excess liquid from the cooked rice and set aside.
5 Meanwhile, in a medium skillet, heat 3 tablespoons of olive oil over medium-high heat. Add the diced red bell peppers and cook for 3-5 minutes, or until tender.
6 Add the cashews and chopped green onions to the skillet. Cook for an additional 2-3 minutes, or until the nuts begin to brown. Remove from heat.
7 In a large bowl, toss together the cooked wild rice and the bell pepper mixture.
8 For the dressing, in a jar with a tight-fitting lid, combine the seasoned rice vinegar, apple cider vinegar, 1 tablespoon of olive oil, minced garlic, salt, and pepper. Cover and shake until well blended.
9 Pour the dressing over the salad and toss until evenly coated.
10 Cover the salad and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld together.
11 To serve, spoon the salad onto a platter lined with lettuce leaves for a refreshing presentation.
