Sedani Rigati with Catalan-Style Shrimp

Shrimp (peeled and deveined) 800g
Cherry Tomatoes 200g
Red Onions 200g
Fine Salt To taste
Black Pepper To taste
Fresh Basil 8 leaves
Extra Virgin Olive Oil 90g
White Wine Vinegar 5g
Shellfish Stock (fumetto di crostacei) 500g

Instructions

  1. Begin preparing the Catalan-style shrimp by carefully detaching the heads from the shrimp. Gently peel off the shells, making sure to set aside the shells and heads as they will be used to make the shrimp bisque.

  2. Make a shallow incision along the back of each shrimp to remove the intestines with the help of tweezers. Once cleaned, store the shrimp meat in the refrigerator until you’re ready to use it.

  3. To prepare the shrimp bisque, finely chop one red onion and set aside. Trim the green ends and outer layers of a leek and cut it into thin rounds.

  4. Heat a large pot over medium heat and add butter. Once melted, add the chopped onion, leek, and garlic. Let the mixture simmer gently for at least 60 minutes. Be sure to skim off any impurities from the stock using a skimmer during cooking.

  5. While the bisque is simmering, wash the cherry tomatoes and cut them into quarters. Add half of the olive oil to the tomatoes, along with chopped fresh basil leaves.

  6. For the onions, peel and cut the red onions into quarters, then slice them thinly. Place them in a bowl, covering them entirely with cold water. Add the white wine vinegar to the bowl and allow the onions to soak.

  7. In another pan, heat a couple of ladles of the hot bisque. Add the sedani rigati pasta and cook according to the package instructions until al dente.

  8. While the pasta is cooking, in a separate pan, heat the remaining olive oil over medium-high heat. Sauté the shrimp in the hot oil for a few minutes, stirring occasionally, until they are just cooked through.

  9. Drain the soaked onions and set aside. Once the pasta is cooked and drained, combine it with the warm bisque and toss to coat.

  10. Add the cooked shrimp, marinated onions, and fresh tomato-basil mixture to the pasta. Toss everything together, ensuring the flavors are well combined.

  11. Serve the Sedani Rigati with Catalan-style shrimp while still hot, garnished with extra basil if desired. Enjoy your Mediterranean-inspired pasta dish!
