Ingredients:

  • 2 cauliflowers
  • 1 1/2 potatoes
  • 1 tablespoon butter
  • 1/4 teaspoon cayenne pepper
  • 6 eggs
  • 1 1/4 cups grated Gruyere cheese

Instructions:

  1. Prepare Cauliflower: Put the cauliflowers into a large saucepan and add just enough water to cover them. Bring to the boil and cook for 12-15 minutes, or until flowerets are very tender. Drain and set aside.

  2. Preheat Oven: Preheat the oven to moderate 180°C (350°F).

  3. Prepare Mixture: In a bowl, mash together the cooked cauliflowers, potatoes, butter, cayenne pepper, and seasoning to form a puree. You can use a food blender for this step.

  4. Incorporate Eggs: One by one, add the eggs to the puree, beating well between each addition.

  5. Add Cheese: Stir in 1 cup of grated Gruyere cheese into the mixture.

  6. Grease Mold: Spoon the puree into a well-greased ovenproof mold or a medium-sized bowl.

  7. Bake Loaf: Cover the mold with foil and place it into a roasting pan filled one-third full of boiling water. Put the pan into the preheated oven and bake for 1 hour.

  8. Final Steps: Remove the pan from the oven and take out the mold. Remove the foil and place a heatproof serving dish over the top of the mold. Invert quickly so that the loaf slides out easily.

  9. Melt Cheese: Sprinkle the remaining grated Gruyere cheese over the top of the loaf and return the mold to the oven for 5 minutes, or until the cheese melts.

  10. Serve: Once the cheese has melted, remove the mold from the oven and serve your Pain De Chou Fleur hot.
