Love this simple salad. A great take along side-dish for picnics and potlucks as it has an oil and vinegar base.

Ingredients:

1 Red onion
10 Black olives
10 Green olives
3 Olive oil
2/3 Vinegar
1/3 Basil
1 Gherkins

Instructions:

  1. Trim the Cauliflower: Begin by trimming the cauliflower and separating it into florets.

  2. Poach the Cauliflower: In a pot, bring water to a boil and add the cauliflower florets. Poach them for about 5 minutes until they are tender.

  3. Cool Quickly: Immediately after boiling, plunge the cauliflower into cold water to stop the cooking process. Drain thoroughly.

  4. Prepare the Salad: Place the cauliflower in a large bowl. Add the sliced red onion, black olives, green olives, and gherkins.

  5. Make the Dressing: In a separate bowl, combine the olive oil and vinegar. Season with salt and pepper to taste. Blend the dressing well.

  6. Coat the Salad: Pour the dressing over the salad ingredients. Sprinkle the basil on top. Toss everything together until the salad is evenly coated with the dressing.
