Ingredients:

Ingredient Quantity
Channa dal 300g
Jaggery 300g
Cardamom powder 1 tsp
Plain flour 150g
Ghee 1 tbsp
Water As needed

Instructions:

  1. Boil the Channa Dal:

    • In a large pot, boil the channa dal in plenty of water until it’s soft but not broken.
    • Drain the boiled dal in a colander and let it sit for 10-15 minutes.
  2. Grate the Dal:

    • Pass the drained dal through an almond grater, little by little, until all the dal is grated.
  3. Prepare the Filling:

    • Mash the jaggery until lumps break and mix it well into the grated dal.
    • Transfer the mixture to a heavy saucepan and cook it until a soft lump is formed, stirring continuously to prevent charring. Set aside.
  4. Make the Dough:

    • In a mixing bowl, combine ghee and plain flour.
    • Gradually add enough water to make a soft, pliable dough.
  5. Assemble the Puranpoli:

    • Take a small ball of dough and roll it into a 4-inch round.
    • Place a similarly sized ball of the filling in the center of the dough round.
    • Gather the edges of the dough and seal the filling inside.
    • Carefully roll out the stuffed dough into a 6-inch diameter round.
  6. Cook the Puranpoli:

    • Heat a griddle or skillet over medium heat and place the rolled puranpoli on it.
    • Cook until golden brown on one side, then flip and cook the other side.
    • Optionally, you can apply a teaspoon of ghee on top of each puranpoli for added flavor.
    • Alternatively, you can shallow fry the puranpoli on the griddle like a paratha for a richer flavor, though this method will increase the calorie content.
  7. Serve:

    • Transfer the cooked puranpoli to a serving plate and serve hot.
    • Enjoy your puranpoli with dal or amti (a thin curry made using black masala, garam masala, and some mashed dal).

Note: The water drained from boiling the dal can be used to make the amti.
