Instructions:

  1. Saute white rice and garlic in butter for 1 minute, then add almonds. Stir until almonds turn slightly brown.
  2. Turn off the heat, then stir in the remaining ingredients for the vegetarian filling.
  3. Brown lamb and garlic in olive oil, add white rice, and stir until rice begins to brown.
  4. Turn off the heat, then stir in the remaining ingredients for the meat filling.
  5. In a 9X11″ baking dish or large wide-bottomed stewing pot, pour 3/4 cup tomato juice, enough to cover the bottom about 1/2″ deep.
  6. Rinse chard leaves and cut off any stems. Steam leaves for 3-4 minutes until soft and pliable.
  7. Allow leaves to cool. Flatten a chard leaf on the working surface and place 2 tablespoons of chosen filling 1/2 inch above the bottom stem end.
  8. Fold each side over the filling, then roll up “burrito style,” ending with the top of the leaf folded over the roll.
  9. Place the dolmade “leaf-tip-side-down” in the tomato juice in the prepared pan. Repeat with all remaining leaves.
  10. Differentiate vegetarian and meat dolmades by placing a sliver of carrot or red pepper on top of the vegetarian ones.
  11. Pour remaining tomato juice over the dolmades.

Cooking Methods:
