Oh my gosh. This pie is sooo good. Apples and cheddar compliment each other very nicely here – what else can I say? Try this one instead of your old standby apple pie recipe. Perfect for Christmas, Thanksgiving, or any weeknight dessert cravings!

Instructions:

For the pastry:
- Combine flour, sugar, dried mustard, and salt in a large mixing bowl.
- Using a pastry blender, cut in the butter and shortening until the mixture resembles coarse crumbs.
- Stir in the sharp cheddar cheese until evenly distributed.
- Sprinkle in water, 2 tablespoons at a time, tossing with a fork until the dough can be gathered into a ball.
- Knead the dough gently, then divide it into slightly unequal halves.
- Wrap each half in plastic wrap and chill in the refrigerator for 45 minutes.

For the filling:
- Preheat your oven to 350°F (175°C).
- Peel, core, and cut the tart apples into chunks.
- In a large mixing bowl, toss the apple chunks with the 8 tablespoons of unsalted butter, 4 tablespoons of sugar, 1/2 cup of sugar, cornstarch, cinnamon, the juice and zest of the lemons, and vanilla extract until well coated.

Assembly:
- Roll out the smaller portion of chilled dough on a lightly floured surface to fit a 9-inch pie pan.
- Gently place the rolled dough into the pie pan, pressing it firmly against the bottom and sides.
- Fill the pie crust with the prepared apple filling.
- Roll out the remaining portion of chilled dough and carefully place it over the filling.
- Seal the edges of the pie crusts together and crimp as desired.
- Sprinkle the top crust with a mixture of 1 teaspoon of sugar and 1 teaspoon of cinnamon.
- Using a sharp knife, make several slits in the top crust to allow steam to escape during baking.

- Place the assembled pie on a baking sheet to catch any drips.
- Bake in the preheated oven for 1 hour and 15 minutes, or until the crust is golden brown and the filling is bubbling.
