Instructions

  1. Prepare the Dough:

    • In a mixing bowl, combine the whole wheat flour, oil, and salt. Gradually add water to knead the dough, making sure it becomes soft and smooth.
    • Once the dough is ready, cover the bowl with a damp cloth and let the dough rest for about 10 minutes. This resting period ensures that the dough becomes pliable and easy to roll out.
  2. Prepare the Stuffing:

    • While the dough is resting, mix all the stuffing ingredients in a separate bowl. Combine the grated cheese, chopped spring onions (both bulb and greens), finely chopped green chilli, chopped coriander leaves, salt, and cumin powder. Stir everything together until well mixed. The stuffing should have a balanced blend of cheese, spice, and freshness.
  3. Assemble the Parathas:

    • After the dough has rested, divide it into small balls, about the size of a golf ball. Roll each ball into a small, round disc, dusting with flour to prevent sticking.
    • Place a spoonful of the cheese and spring onion mixture in the center of each disc. Carefully fold the edges over the stuffing to enclose it, forming a pouch. Press the pouch gently to seal it.
    • Roll the stuffed dough ball into a flat circle, ensuring the stuffing does not spill out. Be gentle while rolling to avoid tearing the dough.
  4. Cook the Parathas:

    • Heat a tava (griddle) or a non-stick frying pan over medium heat. Once the pan is hot, place the rolled-out paratha onto the pan. Cook for about 1-2 minutes until small bubbles begin to appear on the surface.
    • Flip the paratha and cook the other side for a minute. Then, smear a little oil or ghee on both sides and cook further until golden brown spots appear, indicating that it is perfectly cooked and crispy.
    • Repeat the process with the remaining dough balls and stuffing.
  5. Serve:

    • Serve the cheese and spring onion stuffed parathas hot with a side of raita, chutney, or even a simple cup of yogurt. These parathas are perfect for breakfast, lunch, or dinner.
