Ingredients:

All-purpose flour (Type 00) 400g
Water (at room temperature) 400g
Active dry yeast 7g
Fine salt 16g
Smoked scamorza cheese 180g
Edam cheese 100g

Instructions:

  1. Prepare the Dough
    Begin by placing the semolina flour, all-purpose flour, dry yeast, fine salt, and water (at room temperature) into a large bowl. Gently mix with your hands until the ingredients start coming together. Once the mixture has formed, transfer the dough onto a clean work surface and knead it for about 10 minutes until smooth and elastic. The dough should be soft and not stickyโ€”if necessary, continue kneading without adding any more flour.

  2. Let the Dough Rise
    Shape the dough into a ball and place it back into the bowl. Cover it with plastic wrap or a damp kitchen towel and let it rise in a warm place for about 1 to 1.5 hours, or until it doubles in size.

  3. Prepare the Filling
    While the dough is rising, dice the smoked scamorza and edam cheese into small cubes. Set them aside to be used as the filling.

  4. Shape the Bread Ring
    Once the dough has risen, sprinkle your work surface with a little semolina flour. Gently punch down the dough and roll it into a rectangle shape, approximately 30 cm long. Sprinkle the cheese cubes evenly over the surface of the dough. Then, carefully roll the dough into a log-like shape, ensuring the cheese stays inside.

  5. Form the Ring
    To form the bread ring, twist the dough into a circle and seal the ends together. To ensure a hole in the center, you can use a small jar or bottle as a guide by wrapping the dough around it. Seal the dough around the jar to maintain the ring shape. Once done, remove the jar and transfer the bread ring to a baking sheet lightly dusted with semolina flour.

  6. Final Rise
    Cover the shaped bread ring with a clean kitchen towel and let it rise for another 30-45 minutes until it puffs up.

  7. Bake the Bread Ring
    Preheat your oven to 210ยฐC (410ยฐF) in static mode. Once the dough has finished its final rise, bake the bread for 25 to 30 minutes or until golden brown and fully cooked through. The bread should sound hollow when tapped on the bottom.

  8. Cool and Serve
    Once baked, remove the bread ring from the oven and allow it to cool slightly. Serve warm, and enjoy the delightful cheese-filled bread with friends and family!
