Instructions

  1. Prepare the Agretti
Start by cleaning the agretti. Trim off the root ends, then rinse the stalks thoroughly under cold water to remove any dirt. Place the agretti in a large pan with water, add a pinch of salt, and bring to a boil.

  2. Cook the Agretti
Cover the pan and simmer for about 5 minutes, allowing the agretti to soften but still maintain some texture. Drain and set aside.

  3. Shape the Agretti Nests
On a baking sheet lined with parchment paper, form four small nests by arranging the cooked agretti into circular shapes. Press gently to form a slight indentation in the center of each nest.

  4. Add the Cheese
Grate the provolone piccante using a coarse grater. Sprinkle some of the cheese into each agretti nest, ensuring it fills the center. Leave a little cheese aside to sprinkle on top later.

  5. Add the Egg
Carefully crack one egg into the center of each nest. Try not to break the yolk, as it will serve as the centerpiece of this dish.

  6. Bake the Nests
Preheat your oven to 190ยฐC (375ยฐF). Place the baking sheet in the oven and bake for approximately 10 minutes, or until the egg whites are set and the yolks are still soft.

  7. Finish the Dish
After baking, remove the nests from the oven. Sprinkle the remaining grated provolone on top of each egg nest for an extra cheesy finish. Season with freshly ground black pepper and additional salt, if desired.

  8. Serve
Serve the Nidi di Agretti warm, garnished with a bit more black pepper and a drizzle of melted butter if desired.

Serving Suggestions

These agretti nests are fantastic on their own, but they can also be paired with a side of crusty bread or a light salad for a complete meal. For a more robust experience, try serving them alongside roasted vegetables or grilled meats.

Enjoy this flavorful and nutritious dish that brings together the delicate taste of agretti, the richness of eggs, and the sharpness of provolone cheese. Perfect for a weeknight dinner or a special occasion.
