Instructions

  1. Preheat Oven

    • Start by preheating your oven to 375°F (190°C). While the oven heats, grease a 12-cup bundt pan with a generous coating of butter and set it aside.
  2. Prepare the Cheese and Chives

    • In a small bowl, combine 1/2 cup of the shredded cheddar cheese with the chopped chives. This mixture will be saved for a topping at the end, adding a layer of cheesy goodness and vibrant color to the final presentation.
  3. Cook the Asparagus

    • Fill a medium saucepan with water and bring it to a gentle boil. Add the asparagus spears and cook for 3-4 minutes until they are tender and vibrant green.
    • Once cooked, immediately drain the asparagus and run them under cold water to stop the cooking process. Pat them dry and slice them into 1/4-inch pieces.
  4. Prepare the Frittata Batter

    • In a large mixing bowl, combine the sliced asparagus with the eggs, diced red onion, shredded carrots, self-rising flour, milk, 1 teaspoon of salt, 1/4 teaspoon of pepper, and the remaining 1 1/2 cups of shredded cheddar cheese.
