Description: These loaded red potato skins are an irresistible appetizer or side dish, perfect for entertaining or a cozy night in. Crispy potato shells filled with a savory mixture of cheddar cheese, mayonnaise, scallions, bacon, and fresh basil leaves, these skins are bursting with flavor. Serve them with a dollop of sour cream on the side for the ultimate indulgence.

Ingredients:

  • 1 1/2 cups shredded cheddar cheese
  • 1 cup mayonnaise
  • 1/2 cup chopped scallions
  • 1/2 cup cooked and crumbled bacon
  • 10 fresh basil leaves, finely chopped
  • 15 medium-sized red potatoes

Instructions:

1 Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

4 Using a small spoon or a melon ball scooper, gently scoop out the potato pulp from each half, leaving about a 1/4 inch shell intact. Place the hollowed-out potato skins on a separate plate or tray, and set aside the reserved pulp in a bowl.
5 In the bowl with the reserved potato pulp, lightly mash the pulp with a fork or potato masher. Add the shredded cheddar cheese, mayonnaise, chopped scallions, crumbled bacon, and finely chopped fresh basil leaves. Mix everything together until well combined.
6 Spoon the filling mixture evenly into each of the hollowed-out potato skins, filling them to the top.
7 Place the filled potato skins back onto the baking sheet, and set your oven to broil. Broil the potato skins for about 3 minutes, or until the tops are golden brown and the filling is heated through. Keep a close eye on them to prevent burning.
