Black Bean & Bacon Stuffed Potato Skins

At the request (no, actually BEING ORDERED) by fellow zaar chefs in the chat room…LOL… I’m posting this recipe which is something I just whipped up last night for a sinful snack. Takes 5 minutes to prepare, and about 1-2 minutes to cook in the microwave. Can also bake.

  • Servings: 4 Potato Skins

Ingredients:

Quantity Ingredient
2 Potatoes
2 Garlic powder
2 Chili powder
Canned black beans
1/2 Bacon
4 Cheddar cheese
1 Sour cream
Salsa

Instructions:

  1. Prepare Potatoes:

    • Cut pre-baked potatoes in half lengthwise and scoop out potato leaving about 1/4 to 1/2 inch in skin.
  2. Preheat Oven or Microwave:

    • Lay the potato halves out on a baking sheet with the scooped out sides facing up. (Or if microwaving, place on a microwave-safe plate).
  3. Season Potatoes:

    • Sprinkle about 1/2 teaspoon each of chili powder and garlic powder over each potato.
    • Salt and pepper to taste.
  4. Add Fillings:

    • Crumble one slice of bacon inside each (But this is also delicious without the bacon!) and fill with about 1-2 tablespoons of black beans.
    • Sort of press down so it doesn’t all fall out.
  5. Top with Cheese:

    • Top each stuffed potato half with shredded cheddar cheese.
  6. Cook:

    • If baking, preheat the oven to 475°F and bake until the cheese has melted.
    • If microwaving, heat on high for about 1 minute or until the cheese melts.
  7. Serve:

    • Serve with a dollop of sour cream and salsa on top.
